In a canning jar with lid, shake the honey granules and hot water until honey granules dissolve. Mix in remaining ingredients. Shake until combined; set aside.
Layer ingredients equally into each 3-cup canning jar. Begin with the salad dressing on the bottom, continue working up the jar with the diced chicken then the lettuce, pineapple, strawberries, blueberries, clementines and chopped pecans. Cover and place in refrigerator until ready to eat.
