Banana Oat Bars

3/4 cup (150 g) C&H® Granulated Sugar Easy Baking Tub

¼ cup (55 g) C&H® Light Brown Sugar

8 tablespoons (113 g/4 oz/1 stick) Unsalted butter, melted and cooled slightly

2 large Eggs, room temperature

1 tablespoon Real vanilla extract

1 teaspoon Ground nutmeg

1 teaspoon Baking soda

1 teaspoon Baking powder

1 teaspoon Sea salt

¾ cup (68 g) Oat flour

3 medium Ripe bananas, peeled and mashed (about 1 ½ cups/350 g)

1 2/3 cups (225 g) All-purpose flour

¾ cup (177 g) Water, room temperature

2/3 cup (113 g) Chocolate chips

Garnish
  • 1/3 cup (27 g) Uncooked old-fashioned oatmeal
  • 2 tablespoons (24 g) C&H® Granulated Sugar Easy Baking Tub
  • 1/3 cup (57g) Chocolate chips

Step 1

Preheat the oven to 350F (177C) and place a rack in the center of the oven. Grease a 8-inch (x-cm) square baking dish and line the bottom of the pan with parchment paper.

Step 2

In a large bowl, add both sugars, butter, eggs, real vanilla extract, nutmeg and whisk until lighter in color and thick in consistency, about 2 minutes. Add the baking soda, baking powder, sea salt and oat flour, whisking to combine. Then gently fold in the bananas.

Step 3

Alternate adding the flour and water in two batches, mixing each until just combined. completely. Fold in the chocolate chips and pour into the prepared pan.

Garnish

Step 1

Sprinkle with the uncooked oats, sugar and lastly the chocolate chips. 

Step 2

Bake in the center of the oven for 45 to 50 minutes. Set on a rack to cool

Use a gentle hand when stirring the oat flour and bananas into the batter.
