INGREDIENT SUBSTITUTIONS FOR BAKING & COOKING

 

  eggs Eggs & Dairy Ingredients

INSTEAD OF: SUBSTITUTE:
Butter, ½ cup or 1 stick=7 tablespoons vegetable shortening
Buttermilk, 1 cup=1 tablespoon lemon juice or white vinegar + whole milk to make 1 cup (let stand 5 minutes)
Eggs, 2 large=3 small eggs
Egg yolks, 2=1 whole egg
Light cream, 1 cup=7/8 cup whole milk + 3 tablespoons butter
Margarine, ½ cup or 1 stick=7 tablespoons vegetable shortening
Mascarpone cheese, 8 ounces=8 ounces regular cream cheese
Milk, 1 cup=1 cup skim milk + 2 tablespoons butter or margarine 
or 
1/2 cup evaporated milk + 1/2 cup water 
or 
1/4 cup powdered whole milk + 1 cup water
Sour cream, 1 cup=1 tablespoon lemon juice + evaporated milk to make 1 cup (let stand 5 minutes) 
or 
1 cup evaporated milk + 1 tablespoon vinegar 
or 
1 cup plain yogurt
Sour milk, 1 cup=1 tablespoon lemon juice or white vinegar + whole milk to make 1 cup (let stand 5 minutes)
Whipping cream (for cooking), 1 cup=3/4 cup whole milk + 1/3 cup butter
Yogurt, 1 cup=1 cup buttermilk

INSTEAD OF: SUBSTITUTE:
Baking powder, 1 teaspoon=1/2 teaspoon cream of tartar + 1/4 teaspoon baking soda
Cake flour, 1 cup=1 cup minus 1 tablespoon all-purpose flour
Flour, 2 tablespoons=1 tablespoon cornstarch, arrowroot, potato starch or quick-cooking tapioca
Coconut, 1 cup grated=1 1/3 cups flaked coconut
Pumpkin spice, 1 teaspoon=1/2 teaspoon ground cinnamon, 1/4 teaspoon nutmeg and 1/8 teaspoon ground ginger or cloves
Unsweetened chocolate, 1 ounce=3 tablespoons cocoa powder + 1 tablespoon butter or margarine

 

   honey Syrup Ingredients

INSTEAD OF: SUBSTITUTE:
Corn syrup, 1 cup=1 1/4 cups Domino® Granulated Sugar + 1/4 cup water
Dark corn syrup, 1 cup=1 cup Domino® Dark Brown Sugar + 3 or 4 tablespoons water
Honey, 1 cup=1 1/4 cups Domino® Granulated Sugar + 1/4 cup water 
or 
1 1/4 cups Domino® Honey Granules + 1/4 cup water
Molasses, 1 cup=1 cup honey

 

   lemon Fruit Ingredients

INSTEAD OF: SUBSTITUTE:
Lemon juice, 1 teaspoon=1/2 teaspoon white vinegar
Lemon zest, 1 teaspoon=1/2 teaspoon lemon extract
Orange zest, 1 teaspoon=2 tablespoons orange juice or 1/2 teaspoon orange extract
