Ingredients
  • 2 cups Whole milk

  • 1 Cinnamon stick
  • ¼ teaspoon Whole cloves
  • 6 Egg yolks
  • ¾ cup C&H® Granulated Sugar, Easy Baking Tub
  • 2 cups Heavy cream
  • ¾ cup Rum (optional)
  • 2 teaspoons Pure vanilla extract
  • ½ teaspoon Ground nutmeg

Prep Time: 15 minutes / Cook Time: 15 minutes / Yields: 6-8 servings
Step 1

In a medium sauce pan, over medium heat, combine milk, cinnamon sticks, and cloves. Stir and bring the mixture to a boil. Remove from heat. Strain the milk through a fine mesh and set aside. 

Step 2

In a large bowl, whisk egg yolks until pale yellow. Add sugar and whisk until light and fluffy.

Step 3

Pour a little of the hot milk mixture into the egg yolk mixture. Whisk until well combined. Add a little more milk and whisk. Slowly add the rest of the milk and whisk until well combined. Pour this mixture back into the saucepan. Cook over medium heat for 4-5 minutes or until thick, stir constantly. Do not boil the mixture. Remove from heat.

Step 4

Cool to room temperature. Stir in the cream, rum, vanilla, and nutmeg. Refrigerate for at least 8 hours. When ready to serve, garnish with freshly grated nutmeg and cinnamon sticks.
