Spicy Cinnamon Honey Sweet Potatoes
2 to 3 medium sweet potatoes
- 2 to 3 medium sweet potatoes
- 2 tablespoons C&H® Honey Granules
- 1/2 teaspoon chili powder
- 1 teaspoon cinnamon
- pinch salt
- pinch pepper
- 1/2 teaspoon hot sauce
- 2 tablespoons butter, softened
- chopped pecans, optional
- chopped parsley, optional
Wash potatoes with peel on. Cut off the ends and a small slice from one side of potato to make a flat bottom. Beginning in the middle and working to each end, cut 1/2-inch slices, going nearly through to the bottom of the potato. Place prepared potato onto a piece of foil large enough to fold over potato and crimp edges.
In a small bowl, blend honey granules, chili powder, cinnamon, salt, pepper and hot sauce. Add butter to spices and mix together.
Divide spiced butter into each sliced opening of the potatoes. Seal foil packets.
Heat grill to medium-high heat. Place the packet on the grill, cover and cook 30 to 40 minutes. Remove potato packet from grill and let rest 2 minutes. Open foil carefully as the steam will release. Garnish with pecans and parsley.
