Royal Icing (with Egg Whites)

This is a hard-drying icing for special projects or decorations. Use for string work, flowers or "glue."


3 1/2 cups icing


  • 4 cups sifted C&H® Confectioners Sugar
  • 1/3 cup (3 medium) egg whites
  • 1/2 teaspoon cream of tartar


In large glass or metal bowl, beat confectioners' sugar, egg whites, and cream of tartar at high speed for 7 to 10 minutes, or until very stiff.


Use immediately. Keep covered with a damp cloth or plastic wrap to prevent drying.

Thin with a few drops of water or thicken with additional confectioners' sugar.
