Microwave Peanut Brittle
about 1 pound brittle
- 1 cup C&H® Granulated Sugar
- 1/2 cup corn syrup, light
- 1/8 teaspoon salt
- 1 cup raw peanuts, shelled
- 1 tablespoon butter or margarine
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Lightly grease a spatula and large baking sheet; set aside.
Combine sugar, corn syrup and salt in 2-quart microwave-safe bowl. Microwave on HIGH for 4 minutes.
Remove from microwave; stir thoroughly. Add peanuts; stir again. Microwave again on HIGH for 5 minutes.
Remove mixture from microwave. Add butter and vanilla; blend. Microwave again on HIGH for 2 minutes, or until golden brown.
Remove from microwave; stir in baking soda until well mixed and mixture becomes foamy. Pour onto prepared baking sheet; cool.
Break into pieces. Store in an airtight container.

This recipe was tested in a large, full-power microwave (600-700 watts) oven. Cooking times may vary slightly, depending on microwave.
As the candy cools on the baking sheet, stretch it into a thin sheet by lifting and pulling the candy with two forks. Be careful, candy is hot. Stretching the brittle into a thin sheet will help make it crisp.
