Mexican Wedding Cookies
about 5 dozen cookies
- 1 cup (2 sticks) butter, softened
- 2 cups C&H® Confectioners Sugar divided
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/8 teaspoon salt
- 2 cups nuts (any kind), finely chopped
Preheat oven to 350°F. Prepare ungreased cookie sheets.
With electric mixer, beat butter and 1/2 cup confectioners' sugar; add vanilla. Combine flour, salt and nuts; stir into sugar mixture.
Roll dough into 1-inch balls. Place on prepared cookie sheets.
Bake 15 minutes, until lightly browned. While hot, roll in powdered sugar.
Cool on a rack, then roll once again in powdered sugar to coat.
