Maple Butternut Squash
4 (5 ounce) servings
- 20 ounces (2 medium) butternut squash, peeled and cubed
- 4 tablespoons melted butter, divided (2 and 2)
- 1/4 cup C&H® Maple Flavored Granules
- pinch sea salt
- pinch black pepper
- 1 teaspoon fresh chopped thyme, and some additional whole leaves for garnish
Preheat oven to 425°F. Spray an 8x8-inch pan with cooking spray; set aside.
In a medium bowl, stir butternut squash cubes and 2 tablespoons melted butter until all of the pieces are coated with butter. Sprinkle with maple flavored granules, salt, pepper and chopped thyme.
Pour mixture into prepared baking pan. Drizzle remaining melted butter over the top of the seasoned squash. Top with a few more whole thyme leaves.
Bake 20 minutes, or until squash is fork tender and golden on the edges.
