    Bread
  • 4 tablespoons butter, softened
  • 1 cup C&H® Granulated Sugar
  • 1 large egg
  • 1 cup very ripe bananas, mashed
  • 1/2 cup fat-free sour cream
  • 1 teaspoon vanilla extract
  • 1/3 cup very fine, flaked, unsweetened coconut
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
    Spread
  • 1 package (8 oz.) Neufchatel cheese, softened
  • 2 tablespoons C&H® Light Brown Sugar
  • 1/2 teaspoon cinnamon

Instructions
Yields: 1 loaf
Bread

Step 1

Preheat oven to 350°F. Butter an 8-inch loaf pan.

Step 2

Cream butter and sugar together in a medium mixing bowl for 2 minutes, or until light in color; beat in egg.

Step 3

Beat in banana, sour cream, vanilla and coconut.

Step 4

Sift remaining dry ingredients together; fold into batter, mixing just until blended. Pour batter into prepared pan.

Step 5

Bake about 1 hour, or until toothpick inserted in center comes out clean. Do not overbake. Let cake cool, then turn out onto platter to slice.

Spread

Beat Neufchatel cheese, brown sugar and cinnamon together in a small bowl until blended. Butter each slice of bread with about 1 1/2 teaspoons of the spread.
