Fluffy Meringue Frosting

INGREDIENTS

Fluffy Meringue Frosting

  • 2 cups C&H® Granulated Sugar
  • 1/2 cup water
  • 2 teaspoons corn syrup, light
  • 2 large egg whites
  • 1 pinch salt
  • 1 teaspoon vanilla extract

INSTRUCTIONS

Fluffy Meringue Frosting

In large saucepan, heat sugar, water and corn syrup, stirring until sugar is dissolved. Boil, without stirring, to 242°F to 244°F (firm ball stage) on candy thermometer. In large bowl, beat egg whites with salt until stiff, but not dry. Add vanilla. Beating constantly, slowly pour hot syrup* into egg whites until frosting is cool and soft peaks form.

* For Chocolate Meringue Frosting, after pouring in syrup, add 4 oz. melted, unsweetened chocolate.
