Easy Slice Sugar Cookies

These slice and bake sugar cookies make baking big batches a breeze.

3 dozen cookies

  • 1 cup C&H® Granulated Sugar
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 egg
  • 1 tablespoon vanilla
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda

Royal Icing

  • 2 cups C&H® Confectioners Sugar
  • 1 1/2 tablespoons meringue powder
  • 3 tablespoons warm water
  • assorted food coloring
  • sprinkles

In large bowl, mix sugar and butter. Beat in egg and vanilla until light and fluffy. Mix in flour and baking soda. Divide dough into halves. Shape each half into a roll about 1 1/2 inches in diameter. Wrap and refrigerate 1 hour until chilled.

Preheat oven to 375°F.

Cut rolls into 1/4-inch slices. Place on cookie sheet and bake 10 to 12 minutes or until lightly browned around the edges. Cool on wire rack. Frost cookies with Royal Icing and add sprinkles.

Royal Icing

In a bowl, with mixer at medium speed, beat confectioners' sugar, meringue powder and warm water until stiff peaks form, about 5 to 7 minutes. If icing is too thick, add a couple drops of water. If icing is too thin, add additional confectioners' sugar, and continue beating until desired consistency. Add food coloring as desired.

To chill dough quickly, place in freezer for 30 minutes.

Meringue powder is available in specialty stores wherever cake-decorating equipment is sold.

Use icing immediately. Keep covered with a damp cloth or with plastic wrap to prevent drying.
