Chocolate Chip Mini Muffins

A perfect pack-and-go snack, these mini muffins are sure to be a lunchbox favorite!

  • 2 cups all-purpose flour
  • 3/4 cup C&H® Granulated Sugar
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs, lightly beaten
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/4 cups mini chocolate chips


Preheat oven to 375°F. Grease two 24-cup mini muffin pans or line with paper baking cups; set aside.

In a large bowl, combine flour, sugar, salt and baking powder. Add eggs, milk, oil and vanilla, mixing well. Fold in the chocolate chips. Fill muffin cups 3/4 full.

Bake 20 minutes or until muffins are lightly browned. Cool in pan on wire rack for 5 minutes. Remove muffins to wire rack to cool completely.


Filling the muffin cup almost to the brim gives you a larger muffin top.
