Cheesecake Streusel Brownies

Elevate a basic brownie base with rich cheesecake filling and a chocolate chip topping.

INGREDIENTS

Base

  • 2 cups all-purpose flour
  • 2/3 cup C&H® Granulated Sugar
  • 1/3 cup firmly packed C&H® Golden Brown Sugar
  • 1 teaspoon baking powder
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips

Filling

  • 12 ounces cream cheese, softened
  • 1/2 cup C&H® Granulated Sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips

INSTRUCTIONS

Base

Preheat oven to 350°F. Grease a 13x9x2-inch baking pan.

In medium mixing bowl, combine flour, sugars and baking powder; stir until blended. Using fork or pastry blender, cut in butter until mixture resembles coarse crumbs. Set aside 1 3/4 cups for streusel topping. Add egg and vanilla to remaining mixture in bowl. Melt chocolate chips; add to mixture. Mix at medium speed until blended. Spread base evenly in prepared pan; set aside.

Filling

In small mixing bowl, beat cream cheese and sugar until smooth. Add egg and vanilla; beat just until blended. Spread over base; sprinkle with reserved crumb mixture for streusel topping. Sprinkle with chocolate chips.

Bake for 35 to 40 minutes, or until golden brown and toothpick inserted in center comes out with moist crumbs. Cool in pan on wire rack.

Cut into bars before serving.

QUICK TIP

When making bars, use the pan size stated in the recipe. If the pan is larger, the bars will be thinner and drier. If the pan is smaller, the bars will be thicker, may not bake properly, and may be difficult to serve.
