Granola Carrot Bread

Wholesome goodness in every slice—try it using your own homemade granola!

Ingredients

  • 1 1/2 cups granola
  • 1 1/2 cups packed C&H® Dark Brown Sugar
  • 1 1/2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups carrots, grated
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup milk or buttermilk

Instructions

Preheat oven to 350°F. Grease and flour 9x5x3-inch loaf pan. In large bowl, combine all ingredients; stir just until mixed. Pour into pan.

Bake 55-60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool on rack.
