Glossary of Sugars
SANDING SUGAR: A large crystal sugar mainly used in the baking and confectionery industries to sprinkle on top of baked goods. SUGAR OR SUCROSE: A sweet crystalline material occurring naturally in fruits and vegetables through photosynthesis, the process by which plants transform the sun's energy into food. Sugar is found in greatest quantities in sugarcane and sugar beets, and is separated from these plants for commercial use. Used as a sweetener, a dietary carbohydrate, and a preservative of other foods. SUGAR/DEXTROSE BLEND: Granulated sugar Blend:ed with dextrose, a sweetener derived from corn. Since dextrose is less sweet and more water-attracting, Blend:ed sugar may not perform as expected when substituted for pure sugar. SUPERFINE: A sweet crystalline material occurring naturally in fruits and vegetables through photosynthesis, the process by which plants transform the sun's energy into food. Sugar is found in greatest quantities in sugarcane and sugar beets, and is separated from these plants for commercial use.
