Glossary of Sugars
LIQUID SUGAR: Essentially liquid granulated sugar, used in products wherever dissolved granulated sugar is called for. Amber liquid sugar is darker in color and used in products in which some impurities are not a problem. MOLASSES: A natural part of sugarcane, extracted through a three-step boiling process. Used for cakes, cookies, and gingerbread. MUSCOVADO: A coarse, dark brown cane sugar with a strong, bittersweet molasses flavor. Used in gingerbread, chutney, and barbecue sauces.
