Pumpkin pies are custard-like pies that are made with an uncooked filling containing eggs. When cooked, the eggs coagulate to set the filling. To cook the crust completely, bake the pie in a hot oven for the first 15 minutes. After the first 15 minutes, reduce the heat in order to cook the filling slowly. To test for doneness, gently shake the pie. It should be the consistency of Jell-O. The middle will still be slightly soft, but it will continue to cook once you remove it from the oven.
