For: Use:
1 teaspoon baking powder 1/2 teaspoon cream of tartar
+ 1/4 teaspoon baking soda

1/2 cup (1 stick) butter or margarine 7 tablespoons vegetable shortening

1 ounce unsweetened chocolate 3 tablespoons cocoa
+ 1 tablespoon butter or margarine

1 cup grated coconut 1 1/3 cup flaked coconut

1 cup light cream 7/8 cup whole milk
+ 3 tablespoons butter

1 cup sour cream 1 tablespoon lemon juice + evaporated milk to make 1 cup (let stand 5 minutes)
or
1 cup evaporated milk
+ 1 tablespoon vinegar,
or
1 cup plain yogurt

1 cup whipping cream (for cooking) 3/4 cup whole milk
+ 1/3 cup butter

2 egg yolks 1 whole egg

2 tablespoons flour 1 tablespoon cornstarch, arrowroot, potato starch or quick-cooking tapioca

1 cup honey or corn syrup 1 1/4 cups C&H Granulated Sugar + 1/4 cup water

1 teaspoon lemon juice 1/2 teaspoon white vinegar

1 teaspoon grated lemon rind 1/2 teaspoon lemon extract

1 cup milk 1 cup skim milk
+ 2 tablespoons butter or margarine
or
1/2 cup evaporated milk
+ 1/2 cup water
or
1/4 cup powdered whole milk + 1 cup water

1 cup buttermilk or sour milk 1 tablespoon lemon juice or white vinegar + whole milk to make 1 cup (let stand 5 minutes)

1 cup yogurt 1 cup buttermilk

1 cup cake flour 1 cup minus 1 tablespoon all purpose flour

1 teaspoon pumpkin spice 1/2 teaspoon ground cinnamon, 1/4 teaspoon nutmeg and 1/8 teaspoon ground ginger or cloves

8 oz. mascarpone cheese 8 oz. regular cream cheese

1 cup molasses 1 cup honey

1 cup dark corn syrup 1 cup C&H Dark Brown Sugar
+ 3 or 4 tablespoons water
